A light and sticky glaze tops off this flawless fish dish.

Baked tilapia fish is coated in a Guinness Glaze, and served with seasoned asparagus.

Ingredients

Asparagus bunch

2 tbsp Extra-virgin olive oil

1/2 tsp Salt and pepper to season the fish

3/4 glass Guinness Stout

2 tbsp Brown sugar

1 tbsp Dijon mustard

2 Boneless tilapia fillets

Method

Preheat the oven to 150°C.

Season the fish with salt and pepper and bake in the oven for 35-40 minutes.

Meanwhile, in a small heavy saucepan, stir together beer, brown sugar and mustard and bring to a boil.

Reduce heat and simmer until mixture just starts to thicken, 5 to 8 minutes. Remove from heat and set glaze aside.

Meanwhile, rinse asparagus and break off tough ends drizzle with olive oil, salt, and pepper. In the last ten minutes of cooking time for the tilapia, place asparagus in the same baking dish, and bake for 10 minutes.

Apply the glaze on the fish serve and enjoy.
