Ingredients

6 Black mission figs, cut into wedges

6 Tiger stripe figs, sliced into rounds

90 g Pomegranate seeds

60 g Toasted pistachios

3 Heads baby gem lettuce

230 g Rocket salad

85 ml Maple syrup

115 ml Sherry vinegar

220 ml Olive oil

1/2 tsp Dijon mustard

1 tsp Salt

Method

In a small bowl, whisk together maple syrup, sherry vinegar, Dijon mustard and salt.

Whisk continuously and slowly add olive oil.

Store the vinaigrette in an airtight container until ready to use.

In a large bowl add figs, pomegranate seeds, pistachios, baby gem lettuce and rocket salad.

Pour vinaigrette over the salad and serve.
