Chef Corwin Hemming has Jamaican heritage and currently lives in New York City. His Guinness Jamaican black cake is a take on the Caribbean black cake classic and pays homage to his Jamaican roots. The dried fruit used for the cakes is soaked in Guinness Original Stout instead of the traditional red wine.

Ingredients

2 cups Unsalted butter

1 cup Sugar

1/2 cup Brown sugar

1 cup Guinness Original (plus extra to soak the fruit)

1 cup Captain Morgan White Rum (plus extra to soak the fruit)

3 tsp Baking powder

1 tsp Almond extract

1 tsp Vanilla extract

10 Eggs

2 3/4 cups Plain flour

2 tbsp Mixed spice

2 2/3 cups Dried mixed fruit (raisins, currants, cherries)
